General: It is the most important category of Greek honey since more than 60% of the total annual production comes from the pines. It belongs to the honeydew honey category and its production requires the existence of the insect Marchalina Hellenica (cotton). Pine honey comes from the honeydew secretions (amino acids and sugars) of this insect. Flavor and Aroma: It is not very sweet and leaves a wonderful flavor and aroma. Color: The color varies depending on the production season. It is lighter in spring while it is darker in autumn. Crystallization: It is difficult to crystallize due to its low sugar content and especially glucose content. Nutritional value: It is a honey with high nutritional value, as it has a large number of nutrients in its composition and is rich in minerals and trace elements (calcium, copper, magnesium, zinc, iron, etc.), proteins and amino acids.
